I started a Cookie Challenge. Basically I make a cookie from each country each time. I made one from Netherlands (Speculaas), Germany (Janhagel), Iceland (Icelandic Pepper Cookies), but I didn't take a picture...
This is Latvian Piparkukas cookies (gingerbread). They are generally a Christmas cookie, but I made them in February.

Recipe for these:
Stuff you're going to need:

First group:
2 ½ cups flour
¾ tsp cinnamon
¼ tsp ground ginger
¼ tsp pepper
¼ tsp ground cloves
¼ tsp ground nutmeg
¼ tsp coriander
¼ tsp ground cardamom

Second group:
1/3 cup of honey
¼+1/8 cup molasses
¾ cup brown sugar
1/3 cup butter/margarine
2 tbsp lard

Third:
1 ½ eggs slightly beaten

Fourth:
1 2/3 cup flour
¼ tsp baking soda
1 tsp baking powder

Fifth:
1 egg slightly beaten for brushing

How long is this going to take you? Three hours.
Directions:
See that? I made it into groups for a reason. You take that first group of "dry" ingredients and you sift it together (do not put this of til later). Take that second group in one of those soup pots (the larger one probably with one or two handles) and you place it all together in there. Boil it. Remove from heat. Add the first group immediately (told you you had no time to make it later). You're gonna take a strong mixing spoon/spatula and you're going to mix these two groups together with force because it will get tough. Once it's done, let it cool, mixing occasionally or else it'll get harder. When it's cool enough that you won't burn yourself (this is called lukewarm to most people) place that first egg in. Mix again. Place a tea towel or whatever on it and let it cool for one hour (in the fridge). Your patience is wearing thin, but you're going to have to wait. Once that's done though, preheat the oven to 400°F. Add the rest of the ingredients (except the egg). Roll out the dough (with flour or it'll stick) with a rolling pin (also flour this). Once it's thin, cut it out with whatever shape your little heart desires. There's gonna be scraps, but you put them back together and repeat the whole rolling out step and you have more cookies suddenly. Place these little things on a baking sheets. Take that last egg there and mix it. Brush the egg onto the unbaked cookies. That's what's going to give it that shine that makes everyone think it looks better than it actually is. Put the cookies in the oven for about nine minutes before letting them cool. Or eat it right away and let it burn your tongue.
